Alcoholic beverages are produced by the fermentation of plant components like fruits, leaves, seeds, stems and grains. The different processes involved are malting, mashing, fermentation, distillation, ageing/maturation, blending and bottling.

Whisky is an alcoholic beverage that is strictly regulated worldwide. It is typically made from grain and is aged in wooden casks made from charred white oak. Whiskies are classified based on the starting material or grain used, quality and alcohol content. Though the process followed to produce the different types of whisky is the same.

The process used to produce whisky

Whisky is sold at an alcoholic content of around 40% abv. The different processes used to produce whisky are as follows:

Malting

The grain is selected and the germination process is begun by heating from peat or coal burning. This helps the grain to grow. Peat offers a smoky flavour to the whisky.  Malting is necessary for enzyme activity.

Mashing

The malted grain is grounded and heated slowly for several days. After mashing it is filtered to obtain wort which is altered to get the required sugar content.

Fermentation

In this process, yeast is used to convert sugars into cellular energy and get ethanol and carbon dioxide as byproducts. This process is carried out in a controlled environment to convert the grain mash into alcoholic compounds. Mostly closed fermentors are used rather than open tank fermentors. The open tank fermentor takes more time and has more chances of contamination.

Distillation

In this process, the principle that ethanol and water have different boiling points is used. The liquid is heated and then condensed to get pure ethanol in the receiver. In this process, 95% ethanol can be obtained. The ethanol obtained has to be made free from the congeners. Congeners have bad taste and have to be eliminated.

Ageing/Maturation

The pure ethanol is diluted to get the right concentration and stored in a white oak barrel. The barrel is kept in a cool and wet environment.  The congeners, sugars and alcohol interact with the wooden barrel to give it taste, colour and aroma. The ageing process is carried out for 2 - 3 years.

Blending

In this process, the appropriate amount of different whiskies like from the previous batch and the aged batch are mixed. Additional colouring and flavouring compounds are added as required.

Bottling

Whisky is packed in glass bottles of standard sizes and shapes. This process takes place in scrutiny to avoid any contamination. Tamper-proof capping technologies are used for packing.
